You need to create a copy of templates/tiki-contact.tpl and put it in the specific theme folder ( templates/styles/name_of_theme/ folder) Then edit the templates/styles/name_of_theme/tiki-contact.tpl file as needed. Think of the templates folder as being the original versions and the files in the templates/styles/name_of_theme folder as overwriting them for the specific theme. This separates customizations from original versions.
